Es diu edulcorant a aquella subst\u00e0ncia que aporta sabor dol\u00e7 a un producte, per\u00f2 actualment quan parlem d\u2019edulcorants pensem en subst\u00e0ncies que podem utilitzar com a alternativa al sucre per a endolcir aportant menys calories (kcal).<\/p>\n<p><!--more--><\/p>\n<p><strong>El seu consum s\u2019ha elevat en els \u00faltims anys donada la preocupaci\u00f3 creixent per l\u2019augment de l\u2019obesitat i de malalties relacionades amb aquesta, com ara la diabetis, el colesterol, la hipertensi\u00f3, etc. <\/strong><\/p>\n<p>No obstant aix\u00f2, cal valorar si aquests edulcorants poden donar lloc a una altra mena de problemes i si podem establir que hi ha alguns tipus d\u2019edulcorants m\u00e9s adequats que uns altres.<\/p>\n<p>Hi ha dos tipus d\u2019edulcorants: els anomenats <strong>edulcorants naturals o nutritius<\/strong> i els <strong>edulcorants artificials o no nutritius<\/strong>.<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>Els <strong>edulcorants naturals o nutritius<\/strong> s\u00f3n aquells que s\u00ed que aporten una mica de valor energ\u00e8tic, \u00e9s a dir, tenen calories. Alguns exemples s\u00f3n la fructosa i els poliols (maltitol, sorbitol eritritol, xilitol&#8230;)<\/li>\n<li>Els <strong>edulcorants artificials o no nutritius<\/strong>, en canvi, no tenen valor energ\u00e8tic. En aquest grup trobar\u00edem l\u2019aspartam, acesulfam, sacarina, ciclamat, estevia&#8230;<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>Ara la pregunta \u00e9s, quin tipus d\u2019edulcorant \u00e9s el m\u00e9s adequat?<\/p>\n<p>Si \u00fanicament ens quedem amb aquesta difer\u00e8ncia podria semblar que els <strong>edulcorants artificials<\/strong> s\u00f3n la millor opci\u00f3 per a substituir el sucre ja que no aporten calories i aix\u00ed aconseguir una millor salut o, en cas de ser aquest l\u2019objectiu, perdre greix corporal. Per\u00f2 hi ha estudis que investiguen la possible relaci\u00f3 que hi pot haver entre el consum d\u2019aquests edulcorants no nutritius i un augment de pes. Aquests estudis es basen en el fet que, en no posseir valor energ\u00e8tic, es produeix una disminuci\u00f3 de la sensaci\u00f3 de sacietat i aix\u00ed, un augment de l\u2019ansietat cap al menjar, fet que d\u00f3na lloc a un possible ab\u00fas d\u2019aliments processats, d\u2019alta c\u00e0rrega cal\u00f2rica i amb greixos saturats i\/o sucre, aconseguint just l\u2019efecte contrari al desitjat.<\/p>\n<p>Ara b\u00e9, pel que fa als <strong>edulcorants<\/strong> <strong>nutritius<\/strong>, que aporten una mica de kilocalories, s\u00f3n m\u00e9s saciants que els artificials i aix\u00f2 \u00e9s un avantatge sobre aquests per ajudar a controlar millor l\u2019ansietat. No obstant aix\u00f2, una part d\u2019aquests edulcorants o poliols no es pot absorbir en l\u2019intest\u00ed prim arribant a l\u2019intest\u00ed gros on \u00e9s digerida per la nostra microbiota, provocant gasos, inflamaci\u00f3 i malestar digestiu.<\/p>\n<p>Si b\u00e9 \u00e9s cert que, com a excepci\u00f3, tenim un edulcorant anomenat <strong>eritritol<\/strong>, el qual s\u2019absorbeix en major mesura en l\u2019intest\u00ed prim, reduint aquests possibles efectes adversos. Igualment, un ab\u00fas de eritritol tamb\u00e9 pot provocar malestar intestinal.<\/p>\n<p>Un altre aspecte per a tenir en compte sobre qualsevol mena d\u2019edulcorant \u00e9s que modifica la dol\u00e7or natural de l\u2019aliment o beguda que consumirem, provocant aix\u00ed una necessitat de prendre aliments extremadament dol\u00e7os, quan el que s\u2019ha de fer \u00e9s acostumar el paladar al sabor que tenen els aliments en el seu estat natural.<\/p>\n<p>&nbsp;<\/p>\n<p>En conclusi\u00f3, falta molta recerca quant al possible efecte negatiu que pot tenir a llarg termini el consum habitual d\u2019edulcorants, tant naturals com artificials, sobre la microbiota intestinal i sobre la salut.
