Aix\u00f2 no obstant, se\u2019ls ha demonitzat durant molt de temps i se\u2019ls considera els que m\u00e9s engreixen. De fet, si pregunto als meus pacients quin tipus de nutrient engreixa m\u00e9s, en el 90\u00a0% dels casos la resposta \u00e9s \u00abels hidrats de carboni\u00bb.<\/p>\n<p><!--more--><\/p>\n<p>La ra\u00f3 \u00e9s que s\u2019associen a productes clarament cal\u00f2rics, com dol\u00e7os, arrossos, patates fregides&#8230; amb un 50\u00a0% m\u00e9s de calories per la pres\u00e8ncia de greixos, que fan engreixar m\u00e9s que els carbohidrats i les prote\u00efnes i que, a m\u00e9s, en dupliquen les quilocalories (1\u00a0g d\u2019hidrats de carboni aporta 4\u00a0kcal, mentre que 1\u00a0g de greixos equival a 9\u00a0kcal).<\/p>\n<p>Aix\u00ed doncs, \u00e9s necessari tenir en compte diferents par\u00e0metres:<\/p>\n<p><strong>\u00a0<\/strong><\/p>\n<p><strong>Carbohidrats simples i complexos <\/strong><\/p>\n<p>Actuen de manera molt diferent quan entren a l\u2019organisme, canviant el resultat final del balan\u00e7 cal\u00f2ric.<\/p>\n<p>Els <strong>simples<\/strong> estan constitu\u00efts per una o dues mol\u00e8cules de carbohidrats. Els m\u00e9s coneguts s\u00f3n:<\/p>\n<ul>\n<li>Monosac\u00e0rids: glucosa, fructosa (fruita) i galactosa.<\/li>\n<li>Disac\u00e0rids: sacarosa (sucre de taula), lactosa (llet) i maltosa.<\/li>\n<\/ul>\n<p>Els <strong>complexos<\/strong> (o polisac\u00e0rids) estan formats per cadenes llargues de monosac\u00e0rids. Els principals s\u00f3n el mid\u00f3, el glucogen i la cel\u00b7lulosa, i estan presents en verdures, cereals integrals, etc.<\/p>\n<p>La <strong>difer\u00e8ncia principal<\/strong> entre els dos tipus, a m\u00e9s de la seva estructura, \u00e9s que l\u2019organisme necessita convertir els carbohidrats complexos en simples per obtenir energia, mentre que els simples els fa servir directament com a font d\u2019energia, acumulant els que no necessita com a reserva per quan la ingesta cal\u00f2rica sigui insuficient.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>L\u2019\u00edndex gluc\u00e8mic i els hidrats de carboni<\/strong><\/p>\n<p>L\u2019\u00edndex gluc\u00e8mic \u00e9s la capacitat que t\u00e9 un carbohidrat determinat d\u2019augmentar el nivell de sucre a la sang, tant en quantitat com en velocitat. Aix\u00ed doncs, si es consumeix un carbohidrat amb un \u00edndex gluc\u00e8mic elevat, la glucosa augmentar\u00e0 molt i r\u00e0pidament. L\u2019organisme reacciona paral\u00b7lelament a aix\u00f2 segregant insulina, la funci\u00f3 de la qual \u00e9s utilitzar la glucosa com a font d\u2019energia. Ara b\u00e9, si l\u2019augment de glucosa \u00e9s superior al que es necessita, la insulina s\u2019encarrega d\u2019emmagatzemar-ne l\u2019exc\u00e9s a l\u2019interior de les c\u00e8l\u00b7lules a mode de reserva, provocant una pujada de pes si la situaci\u00f3 es produeix freq\u00fcentment.<\/p>\n<p>En el cas dels hidrats de carboni complexos, l\u2019\u00edndex gluc\u00e8mic \u00e9s baix, ja que l\u2019organisme necessita transformar-los en simples, amb la qual cosa l\u2019augment de glucosa en sang ser\u00e0 m\u00e9s durador i menys pronunciat, i l\u2019organisme anir\u00e0 obtenint l\u2019energia paulatinament a mida que la necessiti.<\/p>\n<p>Com a conclusi\u00f3, si volem mantenir el nostre pes corporal, hem de <strong>seguir una dieta equilibrada basada en productes no processats<\/strong> i evitar els sucres afegits (sucs, refrescos, rebosteria o pa blanc).
